2021 - Chateau da Swan - GrenacheQvevri Fermented Grenache Swan Valley Zero additions Our best patch of Grenache in the vineyard is held in reserve for the Chateau da Swan (CdS). This patch received some leaf plucking by hand in late November early December in order to prevent the spread of powdery mildew in a difficult growing season. We selectively chose immaculate bunches from this hand plucked section and ensured that only the highest quality fruit went through the crusher

Conjures up memories of a Herve Souhaut Gamay

and a splash of skin contact Semillon (from the TJ) for good measure

the wine ambled through to dryness in about two and half weeks

This last component saw grenache from all 3 picks compiled into

The palate buzzes with a lime tonic acid and just restrained enough quinine bitters finish

and not cracked until racking in August
